Miso Caesar Salad Dressing
Ingredients:
2 tablespoons white miso paste
1/4 cup olive oil
2 tablespoons lemon juice (freshly squeezed)
1 tablespoon rice vinegar
1 teaspoon Dijon mustard
2 tablespoons grated Parmesan cheese (optional for extra richness)
1 clove garlic, finely minced or grated
1 teaspoon honey or maple syrup (optional, for balance)
1–2 tablespoons water (to adjust consistency, as needed)
Salt and freshly ground black pepper to taste
Instructions:
-In a medium bowl, whisk together the miso paste, olive oil, lemon juice, and rice vinegar until smooth and emulsified.
-Add the Dijon mustard, garlic, Parmesan cheese (if using), and honey/maple syrup. Whisk until well combined.
-Add 1–2 tablespoons of water as needed to thin the dressing to your desired consistency.
