Ferments & Flavors: A Kimchi and Miso Cooking Experience
Join us for an evening of bold flavors, hands-on learning, and delicious food!
Jean Wilson will demonstrate how to make Pogi Kimchi, a traditional whole napa cabbage kimchi, and guide you through the process step by step. While the kimchi made in class won’t be fermented, you’ll get to enjoy a fully aged, ready-to-eat version as part of the meal.
Gabe Garms of Creative Koji will show you how to make two delicious dishes using his handcrafted misos: crispy sweet potato fries with a rich miso sauce and fresh spring rolls with a vibrant miso dipping sauce. You’ll learn how to make both the appetizers and their sauces from scratch and get inspired to recreate them at home.
Sake and wine will be available for purchase from Brix Wine Bar to pair with your meal, and Creative Koji misos will be available for sale at the end of class. Cash, Venmo and cards will be accepted.

The Wonders of Miso
Discover the wonders of miso and its nutritional benefits! Learn how to make your own miso from scratch, including miso made from black beans and miso made from dandelion roots. Gabe Garms, founder of Creative Koji — a company located in the Methow Valley that grows, wild harvests and locally sources its ingredients to craft miso — also will share creative ways to cook with miso using a few simple recipes. Come ready to taste, learn, and be inspired to add this versatile ferment to your kitchen!

Miso Making Workshop
Miso Workshop Series Class with Gabe Garms of Creative Koji. Cost $90. March 9th from 1-3PM.
Learn the essentials of miso! You’ll learn how to make miso using non-soy beans and other unique ingredients like mushrooms and roots as well as how to cook with it.
Participants will take home some of the miso made in class!

Cooking with Miso and Tasting
Discover how miso can transform any dish! In this 1.5 hour workshop, you’ll sample 5 unique dishes made with soy-free, gluten-free misos and learn how to elevate your meals with this versatile ingredient.
Explore the World of Miso
Join us for an engaging event dedicated to the flavors and versatility of miso. This unique experience will feature six soy- and gluten-free miso varieties made with non-traditional ingredients such as dandelion root, pumpkin seeds, and a range of beans.
Sample the miso pastes on their own to appreciate their distinctive flavors, and enjoy tasting three delicious dishes that highlight how miso can be incorporated into everyday meals. From savory to sweet, this event will inspire new ways to use this incredible ingredient.
Jars of miso will be available for purchase, giving you the opportunity to take home your favorites and experiment in your own kitchen.

NW Herbal Fair
The Northwest Herbal Fair (NWHF) is a reunion of Herbalists and the Fair Community from around the Northwest Region, and beyond. The 2024 Northwest Herbal Fair will be held August 16-18, on the Olympic Peninsula at the Lake Leland Amphitheater outside of Quilcene, Washington. The Northwest Herbal Fair (NWHF) is a large, grassroots event with lots of education, fun and music. Most people camp on site. It’s an Herbal Extravaganza and Musical Celebration!
